Taquito Enchiladas

Ingredients
- 1 package José Olé corn beef taquitos
- 1 can green enchilada sauce
- 1 can refried beans
- 3 cups Mexican blend cheese
- 2 cups sour cream
- 2 Roma tomatoes, finely diced
- ½ cup cilantro, chopped
Directions
1. Cook 20 José Olé corn beef taquitos according to the package instructions or air fry for around 8 minutes.
2. Heat refried beans in a medium saucepan over medium heat, stirring occasionally until heated through.
3. While the beans heat, chop cilantro and dice tomatoes. Set aside.
4. Preheat your oven to 350ºF.
5. Once the taquitos are finished cooking, transfer half of them into a baking pan.
6. Layer half of the refried beans, green enchilada sauce, and Mexican blend cheese over the taquitos.
7. Repeat the layers with the remaining taquitos, beans, enchilada sauce, and cheese.
8. Place the baking pan in the oven and bake until the cheese is melted and bubbly, about 8 minutes.
9. Remove from the oven and top with sour cream, diced tomatoes, and chopped cilantro.
10. Serve and enjoy!
