Elote Salad
This fast and delicious corn salad makes the perfect side dish for any meal! Whether feeding a crowd or just yourself, this salad will make just about anyone “Say Olé!”

Ingredients
- 4 ears of corn
- 3 tbsp mayonnaise
- 5 oz. Cotija Cheese
- 1 small red onion
- 1 small bunch of cilantro
- 2 jalapeños
- 3 garlic cloves, grated or finely minced
- Juice of 1 lime
- Kosher Salt
- Chili Powder
Directions
- Remove kernels from the corn. (Cut with a knife from the top of the cob, away from you, towards the bottom. To simplify this recipe, substitute canned corn.)
- Finely chop the cilantro, red onion, and jalapeños. In a medium mixing bowl, add your corn and finely chopped veggies.
- Add the mayonnaise, Cotija cheese, lime juice, and garlic. Mix until ingredients are evenly incorporated.
- Add kosher salt and chili powder to taste, then serve with your favorite José Olé product for a fast and delicious meal.
