Ingredients:

  • 4 ears of corn
  • 3 tbsp mayonnaise
  • 5 oz. Cotija Cheese
  • 1 small red onion
  • 1 small bunch of cilantro
  • 2 jalapeños
  • 3 garlic cloves, grated or finely minced
  • Juice of 1 lime
  • Kosher Salt
  • Chili Powder

Instructions:

  1. Remove kernels from the corn. (Cut with a knife from the top of the cob, away from you, towards the bottom. To simplify this recipe, substitute canned corn.)
  2. Finely chop the cilantro, red onion, and jalapeños. In a medium mixing bowl, add your corn and finely chopped veggies.
  3. Add the mayonnaise, Cotija cheese, lime juice, and garlic. Mix until ingredients are evenly incorporated.
  4. Add kosher salt and chili powder to taste, then serve with your favorite José Olé product for a fast and delicious meal.
