When it comes time for the big game, I’m all about enjoying family and friends. Of course, I want great food.

This is where José Olé Mexican snacks come in handy! They are crowd pleasers that disappear in a flash, and no one knows (or asks) if I made them myself. Loved by kids and adults alike, José Olé Mexican snacks make football entertaining easy.

We especially love the taquitos, which are fabulous alone or with a simple sour cream or yogurt dip. I adore them with this Avocado Cream, which has become a bit of an obsession of mine. Seriously – you must try this!

This creamy avocado dip has a lot of the taste of guacamole in a smooth and delicious dip you can make in your food processor in minutes. It is an excellent way to mix things up as well as make things easier on yourself.

INGREDIENTS
  • 1 Cup Quinoa (rinse, strain, cook with 2 cups water)
  • ¼ Shredded Red Cabbage
  • 1 Ear Grilled Corn
  • 1 Diced Tomato
TO MAKE

Prepare this Cucumber Avocado Dressing to add to your salad.

  • 1 avocado
  • 1 persian cucumber
  • 2 tbsp fresh parsley
  • 2 cloves garlic
  • ¼-1/2 onion
  • Add the juice of ½ lemon
  • 1 jalapeno
  • Salt/pepper to taste
  • Add ½ cups of water
  • Blend once all of this is together

 

Plate the quinoa, cabbage, corn, & tomato. Drizzle Dressing on top. Reserve dressing so this can be used for dipping sauce for your José Olé taquitos.
