Santa Fe Nachos

Preparation Time: 20 minutes (includes baking time)Serves 4





1 Box José Olé Chicken and Cheese Nacho Bites
½ Can Corn, drained
½ Can Diced tomato, drained
½ Can Black beans, rinsed and drained
½ Cup Bell pepper, diced
½ Tablespoon Cooking oil
¼ Cup Cilantro, chopped
½ Cup Queso fresco
½ Cup ​BBQ Sauce
1 (14 oz.) Box Instant rice, prepared
1 Lime



  1. Preheat oven to 400°F degrees.
  2. Combine corn, tomatoes, black beans and bell pepper in a small bowl and toss with oil then place onto a greased rimmed baking sheet.
  3. Arrange nacho bites on a separate greased rimmed baking sheet.
  4. Cook both baking sheets for 8-10 minutes.
  5. Combine cooked vegetables with hot rice and juice of one lime.
  6. Portion rice and vegetables on four plates and top with five nacho bites. Drizzle with BBQ sauce and sprinkle with cilantro and queso fresco. 

*Tip: Extra canned black beans, corn, and tomato can be combined and lightly seasoned with lime juice and salt for a great salsa for chips or as a topper for another dish.
